Lemon-Tarragon Chicken in Light Cream Sauce

This sumptuous dish will leave you wanting seconds or thirds. This version of cream sauce is much lighter than the versions you’ll encounter in the grocery store—it’s not nearly as viscous or fattening as the store-bought ones. In addition, it’s made with fresh lemon and sweet tarragon, a perfect, complementary pair.

Lemon-Tarragon.jpgWhenever I need a hearty meal to get me through the day, I whip up this easy, scrumptious pasta dish.

Pan-fry a chicken breast on medium heat for 15 minutes each side. After the chicken is golden-brown on both sides, cut it into pieces and return it into the pan. Douse the pieces with olive oil, lemon juice, one teaspoon dried tarragon, sea salt and cracked black pepper. Let it cook for another few minutes and then add about 1/4 cup half-and-half. Let simmer for five minutes and then toss with fettuccine.
